I always love a sweet ending to a new beginning.
GF/DF Blueberry and Banana Oat squares. (Refined sugar free, egg free)
This sweet treat has a rich buttery-like crust and of course the fresh flavour of juicy blueberries. It’s quick and easy to make and uses up any ripe bananas you may have kicking around. It’s just sweet enough that it makes a nice dessert or coffee cake, but is wonderful to have for breakfast as well.

Ingredients: Filling
2 Cups Blueberries
1 Cup Raspberries (optional)
Lemon Zest, 1 lemon
1 tsp Real Maple Syrup
2 Tbsp Ground Flax
Crust:
1 cup gluten free oats
2 ripe bananas
3 tsp Cinnmaon
1/2 tsp Salt
2 Tbsp Real Maple Syrup
3 Tbsp Coconut Oil
Directions: Preheat Oven to 350C
Combine blueberry filling ingredients and set to the side. In a separate bowl, mix the crust ingredients until well combined. In a greased dish, pack down the crust along the bottom (reserving some for topping). Next, pour the blueberry filling on top of the crust and then crumble the remaining crust on top.
