Cauliflower Fried Rice with Roasted Sesame & Honey Glazed Chicken.

Eat less from a box and more from the earth...

Here is a quick and easy spin on Chicken fried rice which
the whole family will love. 

 

INGREDIENTS

1 medium Head Cauliflower

1 Tbsp Sesame Oil

2 Large Eggs

1 Tsp Salt

1 Onion, diced

1/2 Cup Frozen Peas

1/4 Cup Diced Carrots

2 Garlic Cloves, minced

1 Cup of Chopped Scallions

3 Tbsp Tamari

1Tbsp Olive Oil or Coconut Oil

1 Tbsp Roasted Sesame Seeds

4-6 Chicken Things

1 Tbsp Honey

 

 

DIRECTIONS

Pre-heat oven to 425C

Chop cauliflower and add to food processor to chop until its a rice texture. Don't over chop it. Mix eggs in a bowl and scamble in olive oil at medium heat, set aside. Drizzle 1 Tbsp honey, 1/2 Tbsp Olive Oil, dash of salt over Chicken. Pop in the oven. Bake 45 min. Add the sesame oil to the pan and saute onions, carrots, peas and garlic until soft. Add the cauliflower and tamari to the pan and cook for approximately 5 more minutes until the cauliflower is tender.

Add chopped chicken, egg and top with scallions and sesame seeds.
