Springtime Roasted Cauliflower and Celery Soup

Warming Traditions for this unpredictable Spring weather. 
A quick and lovely Springtime
Roasted Cauliflower & Celery Soup with shiitakes mushrooms,
garlic and thyme.  
This soup is high in fiber, rich in antioxidants, will help to reduce inflammation, good for the gut and full of vitamins and minerals. 💪
It's warm but not too heavy for this time of year. 
 
INGREDIENTS
2-4 large bulbs of garlic
2 Tbsp Extra Virgin Olive Oil
Sea salt to taste
1 medium onion
1 medium head of cauliflower
1/2 lbs of celery 
3 cloves of garlic 
6 cups bone or vegetable broth
1 teaspoon tamari
Roasted shiitake mushrooms and thyme to garnish. 
DIRECTIONS
 
Roast cauliflower and garlic at 400F 45 min drizzled in salt and olive oil. (Chopped)
 
Meanwhile, sauté onions, garlic and celery in a large pot. 
Add broth and when cauliflower and garlic are roasted add to pot. 
Simmer for 20 min. 
 
Blend with an immersion blender and serve topped with mushrooms, thyme
and a little tamari.
